I am not a NetApp specialist, but this shoud be totally up to snapmirror. I really believe you can replicate after quiescing the VMs. SRM will only see the replica for failover, never uses snapshots...

So if I'm using SRM 5.1 and vCenter 5.1 on DR site, I can pair only SRM 5.1 (and vCenter 5.1).I can't share a single installation of SRM and vCenter 5.1 with customers using an older SRM version. Correct?

Sounds like you havent done a 'reprotect'?  That reverses the replication direction back to the original protected site. See Reprotect Virtual Machines JD
